Lecithin is a phospholipid that gives flexibility to the membranes of all living beings and also esterifies cholesterol and transports it to the liver, reducing cholesterol levels. In addition, it is an emulsifier of fats, promoting their digestion and dispersion in the blood, preventing the formation of atheromas and dissolving existing ones. It provides phosphorus and choline, the latter a precursor of neurotransmitters involved in cognitive functions, such as memory.
